Strawberry Sandwich Cupcake Recipe (No Cake Decorating Skills Needed!)

When celebrating with kids, I always love to include some fun food! Doesn’t delicious food always seem to take an ordinary day and make it more into a party? Cake is one of our favorite ways to celebrate, and I love this strawberry sandwich cupcake recipe. It’s also a winner with the kids! Simple, includes actual fruit, and no decorating skills are needed. This is my kind of recipe. 

I can’t believe how beautiful these cupcakes turn out when they really don’t require any decorating at all!

Ok, now I’m going to share the recipe with your for these delicious strawberry sandwich cupcakes!

Strawberry Sandwich Cupcakes Ingredients:

• 1 Box of white cake mix
• 3 egg whites
• 1-1/4 c. water
• 3 Tablespoons unsalted butter, melted
• 1 teaspoon of vanilla extract
• 2 teaspoons of another extract of your choice. (Almond, lemon and strawberry are good choices. Almond extract is my favorite!)

Ingredients For Strawberry Sandwich Filling

• 2 cups of strawberries, diced
• 1 cup of heavy whipping cream
• 1 teaspoon vanilla extract 
• ¼ a cup of powdered sugar + a little extra for dusting the tops of the cupcakes

How To Make Strawberry Sandwich Cupcakes

Preheat your oven to 350°F, and go ahead and line your muffin tin with paper cupcake liners. 

In a large bowl, combine the box of cake mix, water, egg whites, extracts and your butter. Beat with your mixer until it’s fully combined.

Fill the cupcake liners with batter about 2/3 of the way full.

Bake for 15 minutes or until an inserted toothpick comes out clean from the center.

Remove the cupcakes and allow to cool on a wire rack.

For The Strawberry Sandwich Filling:

In another large bowl, use your mixer to whip the heavy cream, vanilla extract, and the 1/4 cup of powdered sugar until heavy peaks form.

Fold the diced strawberries into the mixture. 

How To Assemble The Strawberry Cupcake Sandwiches

Cut each cupcake in half. 

Add the cream to the bottom pieces of cupcake either by spreading it, or you can pipe it on with a big jumbo icing tip. 

Put the top of the cupcake back on each cake.

Sprinkle with powdered sugar for some beautiful cupcakes that really take no decorating skills whatsoever! 

I absolutely love the look that the white powdered sugar adds to the top!
