Start by creaming the butter, sugar, and cream cheese.
Next, add the eggs and almond extract. Stir until smooth.
In a separate bowl, mix the dry ingredients, and add to the butter mixture.
Split the mixture into 3 parts and color them red, yellow, and blue. Then roll into 2 inch balls.
Cover and refrigerate for 2+ hours.
When firm, preheat your oven to 350°F and start rolling your dough into coils (aka ‘snakes’).
Stack 3 colors together, and shape into rainbows, trimming with a butter knife where necessary.
Sprinkle the top of each cookie with white sugar, and cook for 12-15 minutes or until cookies begin to brown on edges.
